TWO 6870s vs. ONE Zotac AMP 560 Ti
The extra cost to build the Crossfire system is about $200 based on a different MB, Power Supply and the extra card.

My question is, are there Benchmarks that show the Crossfire system being significantly faster than the single card system so as to warrant the extra cash?

Yes two 6870s is going to be way faster than a single 560 Ti. The Anandtech benchmark shows you that.

The benchmark shows you that the two card would be twice as fast as the one card. However, do you really need that much performance? I max out starcraft II with just my evga gtx 260 core 216 or my evga gtx 460 in the system.
